Rainbows & Unicorns Cake
When I asked my daughter what theme she would like for her next birthday- she, without hesitation, exclaimed "Rainbows & Unicorns". This was said with great conviction some six months prior to her birthday!
At first, I wasn't sure about how I was going to tackle the cake. Eventually I decided I would use Debbie Brown's Pegasus cake design and modify it to suit the theme better. I also decided that I wanted a 'white' exterior which would encase a rainbow layer cake. In the meantime, I began to gather party supplies like the rainbow piñata, paper plates/cups, and rainbow twine and so forth. Fast forward to three days before the party and panic set in. Rainbow layer cakes are beautiful but with only one tin and deciding that I would make a 6 differently coloured layers of white chocolate mud cake, it took me almost 6 hours in baking time to do this! In this time, I made the ganache frosting to coat the cake with before it was sealed over with fondant.
Then I realised that my idea to use the Pegasus cake as my design would never work with a tall cake; I really did need 2 tiers. However, I was not willing to compromise the 6 layer cake either. In addition, I also realised that there was not enough time to do a fondant unicorn. So back to the drawing board it was for me. In the end I decided that I would do a ruffle cake to sort of match the texture of the rainbow piñata that would sit behind the cake. I did the ruffles in white (it took 3 hrs to do the ruffles!!!). I still wasn't happy so very very late at night (or should I say morning) I began to dust the ruffles with sparkly petal dust. Finally I was feeling happier about the cake! The final touches were the plastic My Little Ponies, gold wire (bent to form the archway), lots of edible glitter and a few cute little fondant clouds.
Honestly, I think I should have said Glitter Party instead. We used glitter everywhere, on the cake, on the walls, sparkly silver table runners, and shiny silver spotted paper plates and cups...I almost felt like like dusting the floors in the stuff! Well I might as well have given the amount of glitter stuck to the dining table and floor.
